Immune Boosting Soup

Food is one of the best ways to fight off a cold or sickness. In the middle of winter (here in Iowa) and cold and flu season, we could all use a little boost to our immune system. Here is one of my favorite recipes from Hy-Vee.
This soup recipe features astragalus root. Astragalus has been used in Chinese medicine for centuries. It comes from a bean and has many powerful health properties. Studies show it can boost your immune system, reduce the effects of stress on your body, and support your heart.
This low-calorie healthy soup will help you fight off the winter blues.
Ingredients:
5 cups water
1 TBS Miso Paste
1 cup of Shitake mushrooms (sliced)
2 yellow onions (minced)
1 cup of celery (sliced)
1 cup of carrots (sliced)
1 cup of bell peppers (sliced)
1 TBS ginger
1 tsp of turmeric
¼ tsp pepper
3-4 dried slices of astragalus root
5 cloves of garlic
1 TBS coconut oil
Directions:
Heat water and miso paste in a large pot and allow the paste to completely dissolve. Add mushrooms, onion, celery, carrots, peppers, ginger, turmeric, pepper and astragalus slices. Simmer for at least one hour. Add raw garlic and coconut oil for the final 10 minutes of simmering. Remove astragalus slices from the soup before serving. Enjoy.
